Our pasta is produced with durum wheat grown directly by the company Mancini Pastificio Agricolo. The only ingredients used are semolina and water. We use circular stamps in bronze and dry the pasta at temperatures below 44° C, using about 20 hours for short pasta and about 40 hours for long pasta.
The linguine are 260mm long and have an elliptical section 4.4 mm wide and 1.36 mm thick. The cooking time is 7-9 minutes.
In Liguria the flat noodles are traditionally combined with pesto. They are made for olive oil-based sauces and for meat and fish stews. They have a good bite and are neither too fine, nor do they dominate in such recipes.

Mancine uses synthetic chemical molecules only when strictly necessary and in line with the National Plan of Action for the sustainable use of pesticides (PAN).
